We have a limited supply of middle-aged cattle for sale as sides of beef.  These cattle have not needed to focus their energy on growing to adult size, so have been able to increase fat stores.  They have better marbling that the sides we typically sell.  Additionally, the meat has a richer flavor.  Per a customer who purchased a side of mature beef in May 2026, this is the best beef he's ever had - even better than the beef typically carried in the Minka Farm store.
 
These are priced lower than our standard beef as they are a little older than our typical beef.  Pricing is based on hanging weight and is $5.40/lb.  This deposit will be applied to your side and a typical side is 300 lbs hanging weight.  We will send a cut sheet specific to these middle-aged cattle before your harvest date.
